The origin of the Paccheri is disputed between Campania and Calabria, but it is not possible to attribute the birthplace of this particular format nor the one nor the other. They are part of the family of short pasta striped straight cut, with diameter of about 28 mm and length of 46 mm and thickness between 1,18 and 1,26 mm.

Neapolitans call this type of dough "paccare», la cui traduzione in lingua é « schiaffo ». Probably in the folk tradition we wanted to remember their texture thick and heavy, as a well-aimed slap.

Paccheri are recommended for the preparation of pasta topped with meat sauce dense and full-bodied, such as the Neapolitan, they can penetrate into the pasta and season. Alternatively, they can be enjoyed in pies baked with cheese and tomato sauce.
